I have been working on this question for the last 6 years. To answer it in one sentence: the aural architect designs the experience of spatiality, which is the perception of attributes that the listener associates with space but which is not necessarily related to space.
The subject is covered in my book, Spaces Speak, Are You Listening in Chap. 5. More information can found on the web site www.SpacesSpeak.com, which contains articles, podcasts, reviews, a few chapters, and other related material.
